If there´s one thing I never get bored of it´s salmon. In Sweden I buy something called salmalax, at it´s without a doubt the best quality. But if you go to your local fishmonger you ask for salmon especially for sushi or sashimi.
I always freeze mine for three days just to be on the safe side if it´s not salmalax. When fresh, cut in thin slices an place on a plate. Drizzle japanese soy and coriander. so simple, yet so tasty!
