Mother's Meatloaf

Best meatloaf, hands down. Great to make as a gift to a friend or neighbor in need. From the “Albany Times Union” 5/21/2009.
Difficulty: Easy



  • 1c bread crumbs
  • 1c rolled oats
  • 2/3c milk
  • 2 eggs slightly beaten
  • 1/3c ketchup
  • 2T Worcestershire sauce
  • 2t each: barbecue sauce, finely chopped garlic, finely chopped chives
  • 1t each: herbes de Provence, paprika, salt, black pepper
  • 1lb each: ground beef, ground pork
  • 1/2c finely chopped yellow onion
  • 1/4c finely diced red bell pepper
  • 2/3c finely chopped parsley

Step By Step

1) Heat oven to 350.
2) Spray 9″ loaf pan with cooking spray. Line bottom with parchment paper. Spray again.
3) Combine bread crumbs, oats and milk. Let soften.
4) Combine eggs, ketchup, Worcestershire, BBQ sauce, garlic, chives, herbes de Provence, parika, salt, and black pepper.
5) Mix chuck, pork, onions, red pepper, and parsley by hand.
6) Combine all ingredients and mix lightly with your hands.
7) Put mixture in pan and pat down lightly.
8) Bake until meat thermometer reads 165. About 1 hour.
9) Let rest 15min. Slice and serve.
