Guacamole my way

This is one of the favorites at home and there’s always a bowl of it in the refrigerator. It’s perfect on crostini or as a side dish to chicken or salmon. It’s similar to guacamole but with more texture.

You need:

  • 2 avocados
  • 2 dl green peas
  • 1 dl edamame beans
  • 2 tbsp olive oil
  • 1 clove garlic
  • Salt and pepper
  • 1 tsp lemon juice

How to:

  1. Blend all ingredients except for 1 dl of the peas.
  2. Add salt and pepper after taste.
  3. Add rest of the peas and the lemon juice, serve on crostini for example.
