This is one of the favorites at home and there’s always a bowl of it in the refrigerator. It’s perfect on crostini or as a side dish to chicken or salmon. It’s similar to guacamole but with more texture.
- 2 avocados
- 2 dl green peas
- 1 dl edamame beans
- 2 tbsp olive oil
- 1 clove garlic
- Salt and pepper
- 1 tsp lemon juice
- Blend all ingredients except for 1 dl of the peas.
- Add salt and pepper after taste.
- Add rest of the peas and the lemon juice, serve on crostini for example.
