Brunch means friends and lots of delicious food! Living in Malta you have a lot of delicious Italian food around you too.

This is my suggestion of what to serve at your weekend brunch. Perfect for both kids and grown ups. And enjoyed best together with a glass of prosecco or champagne.

  • Salami
  • Prosciutto
  • Bresaola filled with mascarpone and lemon zest
  • Chicken skewers
  • Homebaked pizza with parmesan and semi-dried black olives
  • Spinach and feta cheese pie
  • Roasted potatoes
  • Omelett
  • Different cheeses as parmesan, gruyere, manchego and brie
  • Grapes
  • Fresh figs
  • Tomatoes
  • Basil
  • Bread from sour dough together with olive oil
  • Chimichurri
  • Prosecco and sparkling water
  • Have a great Sunday!

Pomegranate smoothie

Pomegranate smoothie is a sweet and healthy choice for breakfast

This morning started with a pomegranate smoothie and of course some sunshine. Something that happens fairly every day here in Malta. A country known for sunny days and kind people. Even though they say Maltese winter is here, for us it’s more like Swedish summer. The winter season in Malta offers the best range of fruit in my opinion. Citrus, pomegranates and so on.

So the breakfast smoothie of today is full of good stuff from an organic farm nearby. Ready to keep you going all day! And also an excellent way of ”hiding” nutrients in your kids meals.

You need:

  • 2 medium size ripe bananas
  • 1 small red pomegranate apple
  • 1 large orange peeled and cut in pieces
  • 2 dl organic yogurt
  • 1 tbsp of honey
  • 1 tbsp shelled hemp
  • 1 tbsp chia seeds

How to:

Put all the ingredients in a blender or mixer and blend. Enjoy!

Pomegranates from Vincent´s Eco-Farm in Malta

My favorite fruit pomegranates is in season right now!

Pomegranates are sweet, delicious and full of vitamins. Said to help lower blood pressure, be anti-inflammatory and fight arthritis makes it extra interesting in cooking.

I eat the kernels as they are or use them in salads. The ruby red color brigthens up all dishes!

They´re perfect together with halloumi and quinoa for example.
